Cockroaches in Food Areas: Prevention and Control

Cockroaches, especially the German cockroach (Blattella germanica), are a serious problem in food environments such as restaurants, bakeries, supermarkets, and food industries.

In addition to causing revulsion, these insects pose a health risk, as they can transmit bacteria such as Salmonella and E. coli, and cause allergies and asthma attacks through feces, skin debris, and secretions.

Characteristics of the German cockroach

Small size: 1 to 1.5 cm.

Nocturnal: mainly active at night, hiding in crevices, cracks, and equipment.

High reproduction: a female can lay up to 50 eggs per capsule (ootheca), which hatch in weeks.

Varied diet: food scraps, fats, paper, and even glue.

Prevention Measures

1. Strict hygiene:

• Clean surfaces, equipment, and utensils daily;

• Remove food scraps immediately;

• Keep floors dry and free of grease.

2. Proper food storage:

• Use closed containers;

• Avoid leaving food exposed outside of refrigeration.

3.    Reduction of shelter and access:

•    Seal openings, cracks, and baseboards;

•    Close trash cans and use drain covers;

•    Eliminate standing water.

4.    Constant monitoring:

•    Regularly inspect hard-to-reach areas, behind equipment, and shelves.

When the infestation is severe, professional intervention is recommended.
